We are so sorry we missed everyone yesterday! We were camping/hiking in the Rockies and had a blast! Now it’s time to get back to the real world and make some deliciously sweet dinner rolls; not such a bad real world if I do say so myself. I don’t know if it was my loss of calories the past two days, but I was really craving some fresh bread today. I thought dinner rolls would be the easiest/best option. They certainly did not disappoint. What makes these rolls so great is how sweet they are. Now, they aren’t in your face sweet so that they take on the characteristics of your average muffin (even though they are kind of shaped like a muffin – but I’ll get to that in a minute), but they have that subtle sweetness that, I don’t know about you, but I always crave in a dinner roll. They are perfect with soup, steak or all by themselves. Give them a try! They are super easy. I promise.
If you are at all confused by my description of how to construct the muffins in the recipe at the end of the post, just check out the pictures below. This is how they should look before they go into the oven. You will literally make 1 inch balls out of the dough and pile 3 to 4 into the muffin molds of your muffin tin. Not only do you get a super cool looking roll, but they meld so perfectly together when they bake. I also find that making dinner rolls in a muffin tin are so much easier to make than constructing them freehand, and who cares what they look like! They come out delicious either way!

This is Cilantro. You probably know this already =). This is Cilantro super, super dirty. We have been camping/hiking in the mountains for the past two days as a test run for Cilantro. We plan on taking him into the backcountry for some backpacking trips, but didn’t know how he would do on trails or how he would do sleeping in a tent. SURPRISINGLY, he did great! I say “surprisingly” because we were convinced that it was going to be an epic fail on his part. We were so impressed with his performance! We were not however impressed that his beautiful white fur had turned gray. Let’s just say he had an extra special bath time today =).
Ok, so back to food:
Whilst I was making these bundles of goodness, I knew that I had to pair them with a beer that has been brewed with honey. That’s not TOO hard to find, but I knew that it had to be an extra special beer brewed with honey. I had no other choice, but to pair these rolls with Dogfish Head’s Chateau Jiahu. It’s brewed with orange blossom honey, so DUH, it only makes perfect sense. This beer is just spectacular and just a little bit difficult to describe. Check out Dogfish Head’s description Dogfish Head’s Chateau Jiahu here. I think that just about sums it up. What I think is great about this brew, is that it pairs so well with spicy or sweet foods. You really can’t go wrong there =).
