Green Goddess Burgers

Burgers are a must-have for the spring and summer seasons, and green goddess burgers are a healthier way to enjoy them! Fire up the grill or sear these burgers on a griddle pan; these green goddess burgers are topped with an addicting green goddess sauce, and then layered with fresh romaine lettuce, micro greens, cucumber and avocado. Place all of these ingredients on top of perfectly toasted multi-grain bread. This recipe is fresh-tasting and delicious!

Happy Friday! Yay yay yay yay! Let’s celebrate Friday with a burger shall we…

Zach and I are burger fanatics. Any time of year, any time of day, burgers are a must-have at least once a week. In the event that we don’t get bored (but seriously, how could you get bored with a burger), we are always looking for delicious new ways to make them better. I like blank canvases like burgers and sandwiches and tacos, and I love putting my creative mind to the test. I mean people are litereally putting peanut butter on burgers these days…and it’s delicious. I’ve tried it with no skepticism what-so-ever.

In our attempt to liven up burgers, we also try to make them healthier once in a while…as healthy as you can get when you are dealing with ground beef. This recipe for green goddess burgers is one of my favorites to date. I love green goddess everything. I’ve tried every single green goddess salad dressing that is out there (and they are all different!). I’ve made my own green goddess dressing, mayo, sandwiches, and tacos (recipe coming soon). I think it was time for a burger.

Boy, did these green goddess burgers deliver. Somehow we managed to make a burger taste green and fresh. I didn’t know this was humanly possible, but it is folks…it is. Pair these burgers with a pilsner, and have a wonderful weekend everyone! xo

Green Goddess Burgers

3 green goddess burgers

Ingredients
  

  • 2 ripe avocado pitted and peeled (divided)
  • 1/2 cup baby arugula
  • 1/3 cup fresh basil
  • 1/3 cup fresh chives
  • 3 garlic cloves
  • salt and black pepper
  • 1/4 cup mayo
  • 1/4 cup plain Greek yogurt
  • 1 pound ground beef
  • 1 large egg
  • 1 tablespoon plain bread crumbs
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • 6 slices multi-grain or seeded bread lightly toasted
  • 4 romaine lettuce leaves
  • 1 cup micro greens I used an Italian blend
  • 1 cucumber sliced
  • 4 ounces fresh sliced mozzarella cheese

Instructions
 

  • To a high powered blender of food processor, add one half of one of the avocados, arugula, basil, chives, garlic, a dash of salt and black pepper to taste, mayo and Greek Yogurt. Puree until smooth, transfer to an airtight container and refrigerate until you are ready to use.
  • In a large bowl, combine the ground beef, egg, bread crumbs, onion powder, garlic powder, Worcestershire sauce and a dash of salt and black pepper. Mix with clean hands or a heavy wooden spoon until the ingredients just come together. Form the meat into 3 equal-sized patties and set aside.
  • Heat your grill or griddle pan over medium heat and spray the patties on both sides with a non-stick spray. Cook the burgers for 3-4 minutes (for medium to medium-rare) on each side or until cooked to your liking. Remove from heat and set aside to rest for a minute.
  • Assemble your burgers, by spreading a layer of the green goddess sauce on the toasted bread. Layer remaining sliced avocado, lettuce, micro greens, cucumbers and mozzarella on top of each burger patty.
  • Serve immediately and enjoy!
