To my blogger friends out there, do you ever find that when you are promoting your recipes you sound like a used car salesman? This happens to me all the time! I apologize if it sounds like I’m trying to sell you guys a ’95 Ford Escort. I just get super excited about food!

Anyway, let’s talk about these red wine chorizo bites. So, I first had a recipe similar to this at a restaurant a few years ago. I was SUPER skeptical. I did not think it would work. I mean red wine has a really strong flavor, and chorizo is about the most flavorful sausage you can buy. I was afraid that either it would taste too much like red wine, or the red wine would get lost with the spiciness from the chorizo sausage. How could this combination possibly work?! Before I even tried it, I was already judging it, so I ordered it to prove my point (or to not prove my point). With that first bite, I immediately regretted judging the recipe in the first place. It was amazing how well-balanced the flavors were! The bread they served with it? Well, that was my favorite part. The juices left behind during the cooking process were a mixture of sweet and spicy goodness, and the bread soaked up those juices beautifully.

Fast forward a couple of years, and I’ve decided to recreate these red wine chorizo bites. The recipe is so simple you guys, and only requires 4 ingredients. Choose a red wine that you love to drink. That flavor will most definitely shine through.

If you were to pair these chorizo bites with anything, I would definitely choose a red wine, but since this is a cooking and beer blog, of course I had to pair with a beer. There are so many craft beers out there that are heavily flavored with wine. I would either go with a barleywine or a beer that has been aged in red wine barrels. Do some research on what your local beer store has before you pair it.

Red Wine Chorizo Bites with Crusty Bread

Ingredients
  

  • 2 tablespoons olive oil
  • 16 ounces Mexican-style chorizo sausage links cut into 1-inch pieces
  • 3/4 cup good-quality red wine
  • fresh loaf of artisan bread

Instructions
 

  • In a large non-stick skillet, add the oil. Heat over medium-high heat and then add the chorizo. Cook for 4-5 minutes or until lightly brown. Add the wine and reduce the heat to a simmer. Simmer for 10 minutes or until the wine has reduced and the chorizo has cooked through.
  • Serve the red wine chorizo bites with fresh bread and enjoy immediately!

  6. I’d like to make these for a party I’m going to. If I cook them at home, what’s the best way to transport and serve at the party?

    1. Hi Carolyn! If you have a crock pot or slow cooker handy, then I would suggest cooking them as the recipe suggests and then transfer them to a slow cooker to keep warm. You can always plug it in when you get to the party to reheat. You can also always reheat them in the oven when you get there at a higher temp. I hope this helps!
