2tablespoonextra virgin olive oil
1tablespoonlemon juice
1tablespoonza'atarherbs de provence may be substituted
salt and black pepper
2/3cupcrumbled goat's cheese
2tablespoonschopped parsley
Instructions
Preheat your grill over medium-high heat.
In a large bowl, whisk together the oil, lemon juice, za'atar and a generous of amount of salt and black pepper. Add the carrots to the bowl and toss to coat.
Lay out a large piece of heavy duty foil. Place the carrots in the middle, and seal up on all sides. Crumble the top to seal.
Place the package on the grill and cook for about 15-20 minutes or until the carrots are tender. Remove from heat and transfer the carrots to a serving platter. Sprinkle the carrots with goat's cheese and fresh parsley.
