French Toast Sticks

Ingredients

  • 8 slices brioche bread cut into thirds
  • 1 cup milk of choice
  • 3 large eggs
  • 1 tbsp honey
  • 1 tbsp + 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 pinch sea salt
  • 1/4 cup granulated sugar
  • 1/2 cup finely crushed frosted cereal like Frosted Flakes; I used a food processor to get a really fine crumb.

Instructions

  • Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  • In a large shallow bowl, whisk together the milk, eggs, honey, 1 tsp ground cinnamon, nutmeg, and salt.
  • Add the brioche bread to the bowl and let soak for at least 30 seconds to absorb the liquid. Meanwhile, mix together the remaining 1 tbsp cinnamon, sugar, and frosted cereal.
  • One by one, transfer the coated brioche bread (letting any excess liquid to drip off) to the cinnamon, sugar, and cereal mixture. Toss to coat, and then transfer the bread to the lined baking sheet.
  • Bake the french toast for about 15-20 minutes on each side or until golden brown. Remove from oven and serve immediately with maple syrup if desired.
  • NOTE: Baking time will vary. I find that it takes me a little bit longer to get a golden brown crust, but it may take you a shorter amount of time. I suggest starting with about 10 minutes and working from there. You may also decrease the oven temperature to 375°F and then cook the french toast sticks for longer.
