Smoky Pepperoni Turkey Sliders with Bacon Jam and Queso

Ingredients

Bacon Jam

  • 6 slices of thick-cut bacon
  • 2 medium-sized yellow onion chopped
  • 1 tablespoon kosher salt
  • 1 cup strongly brewed coffee
  • 1/4 cup maple syrup
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon black pepper

Pepperoni Turkey Burgers

  • 1 pound ground turkey 85% lean
  • 3/4 cup Hormel Pepperoni - Regular finely chopped
  • 3 cloves of garlic finely minced
  • 1 egg
  • 1/2 cup panko bread crumbs
  • 2 tablespoons finely chopped cilantro
  • 2 teaspoons onion powder
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon black pepper
  • non-stick spray
  • 6 slider rolls
  • 12 slices Hormel Pepperoni - Regular
  • 3/4 cup of your favorite store-bought jarred queso cheese warmed through
  • 1/2 cup bacon jam see above recipe
  • cilantro leaves for garnish

Instructions

Bacon Jam

  • Over medium-high heat, preheat a large dutch oven. Add the bacon and cook until crisp, about 8-10 minutes. Remove the bacon with a pair of tongs and transfer to a plate that has been lined with a paper towel. Set aside. Chop up the bacon once cool.
  • With the stove left on and the dutch oven still hot, add the onion and salt. Cook until the onions are brown and caramelized, about 10 minutes. Add the chopped bacon, coffee, maple syrup, brown sugar, apple cider vinegar and black pepper. Give it a good stir and cook for about an hour, or until all of the liquid has cooked out and the jam is dark in color. Remove from heat and transfer the jam to an airtight container. Cool the jam at room temperature before refrigerating it, where it will keep for about a week.

Pepperoni Turkey Burgers

  • To a large bowl add the ground turkey, finely chopped Hormel Pepperoni, garlic, egg, bread crumbs, cilantro, onion powder, sea salt and black pepper. Using clean hands or a heavy wooden spoon, mix the ingredients together until thoroughly combined. Form the meat into 3 tablespoon-sized patties (forming approximately and transfer to a plate.
  • Preheat a grill, griddle pan or large non-stick skillet over medium heat. Spray both sides of the turkey patties with a non-stick spray and cook until brown on each side and cooked through completely, about 7-8 minutes per side. Use a meat thermometer to check for proper doneness. Remove from heat.
  • Assemble your sliders by placing each patty on a roll. Top with pepperoni slices, a drizzle of queso cheese and a dollop of bacon jam. Garnish with fresh cilantro leaves and serve immediately.
