Creamy Tomato Gnocchi and Sausage

This creamy tomato gnocchi and sausage recipe is a quick, easy, and delicious weeknight dinner solution.

Ingredients

  • 1 tbsp olive oil
  • 16 oz Italian sausage
  • 16 oz potato gnocchi
  • 1/4 cup tomato paste
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp hot honey
  • 3 cloves minced garlic
  • 1 tsp red chili flake
  • 1 tbsp chopped basil
  • 1 tbsp chopped oregano
  • 1 tbsp chopped parsley
  • 1/4 cup grated parmesan cheese plus extra for garnish

Instructions

  • Heat 1 tablespoon of olive oil on medium heat in a large skillet. Add sausage and cook until browned.
  • To the same skillet with sausage, add the tomato paste. Stir along with the sausage and cook for about 2 minutes until a deep red. Add uncooked potato gnocchi, heavy cream, and chicken stock. Bring to a boil on medium heat and stir everything well. Cover with lid, and cook for about 5 minutes until the gnocchi is tender. 
  • Next, add the hot honey, garlic, herbs, chili flake, and salt and black pepper. Bring the sauce to a boil on medium heat uncovered, reduce to low-medium heat, stir everything well. Cook until the sauce thickens substantially. This will take about 5 minutes. For a thinner sauce, add a splash of water. 
    Serve with fresh bread and enjoy!

Notes

Gnocchi: I used the dry gnocchi you find in the pasta aisle for this recipe. I have not tested this recipe with frozen gnocchi. If you choose to use frozen gnocchi, plan on extra cook time.
