Servings: 12 bars

Ingredients

  • 1/2 cup creamy peanut butter
  • 1/2 cup brown sugar
  • 1/2 cup melted coconut oil
  • 2 eggs
  • 1/2 teaspon almond extract
  • 2 teaspoons vanilla extract
  • 3 cups almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt

Glaze

  • 2 cups mini chocolate chips
  • 2 tablespoons melted coconut oil
  • 1/3 cup milk any milk will do, I used 2%

Instructions

  • Preheat your oven the oven to 350°F and prepare a 9x13 inch baking dish with parchment paper.
  • In a mixing bowl, combine coconut oil, peanut butter, brown sugar, eggs, almond extract, and vanilla. Add almond flour, baking powder, and a pinch of salt to infuse that extra flavor magic.
  • Spread the dough evenly into the prepared baking dish. Place it in the preheated oven and allow it to bake for 15-20 minutes until it reaches the perfect consistency in the middle and is slightly brown around the edges. Once baked, let the bars cool for about 20 minutes.
  • In a microwave-safe bowl, heat 1 cup of chocolate chips with the remaining coconut oil. Stir thoroughly after each 30-second interval until the mixture is completely melted and smooth. Repeat the process for Glaze 2, but this time, use milk instead.
  • Once the bars have cooled, generously apply the glaze with the milk, allowing it to rest for 20 minutes. Now, the magic begins - drizzle the second glaze over the first.
  • Place the bars in the fridge for an hour to set completely. Slice the bars into individual servings, and there you have it! Enjoy these delectable treats, and for optimal freshness, store them in the fridge.
