How to make these cheesy baked egg boats

Preheat your oven to a toasty 350°F. 🌞 Take the bread and give it a trim by removing the top 1/3, then carve out some of the inside to make room for the eggs. Remember, don’t get too carried away; we want a robust layer of bread at the bottom. Now, show that bread some love by rubbing it with olive oil and sprinkling on some bagel seasoning, salt, and pepper. Pop it in the oven for about 5 minutes or until the bread turns into a beautifully toasted canvas. 🍞

While the bread works its magic in the oven, let’s whip up the eggy goodness. 🍳 Grab a bowl and whisk together eggs, milk, salt, pepper, and a dash of chili flakes. Stir in some fresh spinach and a generous 1/2 cup of shredded cheese to amp up the flavor. 🧀

Storage and Reheating Instructions

This recipe doesn’t do well in the freezer, so I wouldn’t even attempt it unless you are some sort of freezer genius.

I have made these egg boats in advance however. I will typically just sliced it up, stick it in the fridge, and then stick it in the oven to reheat at 350F for about 15 minutes. It’s not as good as fresh, but it will do the trick in a pinch.

Cheesy Baked Egg Boats

Ingredients
  

  • 1 loaf Italian or French bread
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon everything bagel spice
  • 5 large eggs
  • 1/4 cup heavy cream
  • 1 cup baby spinach
  • 1 cup shredded cheese blend
  • red pepper flakes
  • store-bought basil pesto
  • store-bought chili crisp
  • 1 recipe for Billionaire’s bacon

Billionaire's Bacon

  • 6 slices bacon
  • 2 tbsp brown sugar
  • 1 tbsp everything bagel spice
  • 1 tsp cayenne pepper less for less spiciness
  • 1 tsp paprika

Instructions
 

  • Preheat the oven to 350° F.
  • Remove the top 1/3 of the bread. Pull out some of the inside of the bread to create space for the eggs. Be conservative with the amount you pull out. You do want a thick layer of bread at the bottom. Rub with olive oil and sprinkle bagel seasoning, salt, and pepper. Bake for 5 minutes or until the bread is toasted.
  • Meanwhile, whisk together the eggs, milk, salt, pepper, and chili flakes. Stir in the spinach and 1/2 cup shredded cheese.
  • Sprinkle the bottom of the bread with the 1/4 cup cheese, then drizzle over a tablespoon or two of the pesto. Slowly pour in the eggs. Let the brad absorb the egg mixture for a few moments. Top with the remaining cheese. Bake 30 minutes, until just set in the center.
  • Top with bacon (recipe below!), pesto, and chili crisp. Enjoy!

Billionaire's Bacon

  • Preheat your oven to 375° F.
  • Line a baking pan with foil and lay our your bacon.
  • In a small bowl, whisk together the remaining ingredients. Sprinkle on top of the bacon.
  • Bake the bacon for about 15-20 minutes or until crispy.
