Italian sausage

tomato paste

potato gnocchi

heavy cream

How to Make this Creamy Tomato Gnocchi and Sausage

Start by heating up a friendly tablespoon of olive oil over medium heat in a nice, big skillet. Throw in those sliced sausages and let them sizzle until they’re beautifully browned. Now, let’s get cozy with some tomato paste—toss it into the same skillet with the sausage, give it a good stir, and let it hang out for about 2 minutes until it turns this gorgeous deep red color. Time to invite the uncooked potato gnocchi, heavy cream, and chicken stock to the party. This recipe stores extremely well in the fridge. I have not tested this recipe frozen. Much like cooked pasta, gnocchi typically does not freeze well after it has been cooked, but it does refrigerate well. Simply store this dish in the fridge for three days. Reheat in the microwave or oven for best results.

Ingredients
  

  • 1 tbsp olive oil
  • 16 oz Italian sausage
  • 16 oz potato gnocchi
  • 1/4 cup tomato paste
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp hot honey
  • 3 cloves minced garlic
  • 1 tsp red chili flake
  • 1 tbsp chopped basil
  • 1 tbsp chopped oregano
  • 1 tbsp chopped parsley
  • 1/4 cup grated parmesan cheese plus extra for garnish

Instructions
 

  • Heat 1 tablespoon of olive oil on medium heat in a large skillet. Add sausage and cook until browned.
  • To the same skillet with sausage, add the tomato paste. Stir along with the sausage and cook for about 2 minutes until a deep red. Add uncooked potato gnocchi, heavy cream, and chicken stock. Bring to a boil on medium heat and stir everything well. Cover with lid, and cook for about 5 minutes until the gnocchi is tender. 
  • Next, add the hot honey, garlic, herbs, chili flake, and salt and black pepper. Bring the sauce to a boil on medium heat uncovered, reduce to low-medium heat, stir everything well. Cook until the sauce thickens substantially. This will take about 5 minutes. For a thinner sauce, add a splash of water. 
    Serve with fresh bread and enjoy!

Notes

Gnocchi: I used the dry gnocchi you find in the pasta aisle for this recipe. I have not tested this recipe with frozen gnocchi. If you choose to use frozen gnocchi, plan on extra cook time.
