Veggie Loaded Sloppy Joes

Why is it that everything tastes better with an egg on top? I tend to take this method to the extreme and put an egg on just about anything I make. Hey, it’s added protein! It can only add to a dish! You guys. Yum. These loaded veggie sloppy joes are like no other. I’ve never really gravitated towards your everyday sloppy joe. Sure, they are usually super delicious and flavorful, but normally ground beef is the highlighted ingredient; and let’s be honest they are super messy. I don’t like messy.




I am totally that person that will eat their sloppy joe with a fork and knife. It’s ok. You can judge me. I often judge myself, but it’s the mess, guys. The mess.

As I mentioned before, sloppy joes are all about the ground beef. With this recipe, I decided I would veggify (word?) it. Of course, we still need that meat factor, but in addition to that, I threw peppers, onions, carrots, celery and my personal favorite addition: mushrooms into the mix.

They are delicious. Let’s just leave it at that, and they are even better with an egg on top. ;)



So, how was everyone’s holiday weekend?! Who is sad to see it coming to an end!? (hand raises)

I’m kind of bummed because my dad just left and we had a spectacular time. Our trip through big sky country was pretty amazing and as is every trip we take to Jackson, WY, I really really didn’t want to leave. We had a few days to spend here in Colorado for the 4th and it was a great time. I was really sad to see them leave.

There are all kinds of fun recipes in store next week that I’m so excited to share with you! Again, I apologize for being absent last week, but I’m back in full swing!

For now, my 24 hour nap must begin. I have never been so tired in all my life. ;)

Description: I get some serious beer craving as the seasons change. Everyone knows that stouts and porters are perfect for cooler temperatures. On the flip side, I enjoy a good pale ale or a farmhouse ale when summer rolls around. I’m on a huge saison kick lately (saison … farmhouse ale … same thing). They are so refreshing and crisp. They are the perfect beer for a hot day.Prairie has a special way of always delivering a super delicious brew. Puncheon is no different. This beer in particular is a farmhouse rye ale fermented in oak barrels. It is citrusy and refreshing, but still packs a flavorful and robust punch. I really love it for these sloppy joes. Sloppy joes can have some serious bold flavors going on, so you want a beer that can stand up to it, but doesn’t take away from it either. Puncheon is perfect for the job and is a great bottle to add to your beer collection!

Loaded Veggie Sloppy Joes

  • 1 tablespoon olive oil
  • 2 pounds ground beef
  • 1 medium onion diced
  • 2 large carrots peeled and diced
  • 1 celery stalk diced
  • 8 ounces white button mushrooms sliced
  • 1 green bell pepper seeds and stem removed, diced
  • 1 jalapeño pepper seeds and stem removed, finely diced
  • 6-7 cloves of garlic minced
  • 1 3/4 cup Ketchup
  • 2 tablespoons yellow mustard
  • 1 tablespoon worcestershire sauce
  • 1/2 cup beef stock
  • 1/2 cup beer
  • 2 tablespoons tomato paste
  • 1/4 cup brown sugar
  • 1 tablespoon chili powder more or less to taste
  • 1/2 teaspoon red pepper flakes more or less to taste
  • salt and black pepper
  • sandwich rolls
  • grated cheddar cheese
  • sunny side-up eggs optional
  • parsley for garnish


  • In a large dutch oven, heat the oil over medium heat. Add the ground beef and cook until brown, about 6-8 minutes. Drain most of the excess fat.
  • To the dutch oven, add the onion, carrots, celery, mushrooms, green bell pepper and jalapeño. Cook the veggies with the ground beef until tender, about 6-8 minutes. Add the garlic and cook for a minute more.
  • Add the ketchup, yellow mustard, worcestershire sauce, beef stock and beer. Stir to combine, and then add the tomato paste, brown sugar, chili powder, red pepper flakes, and a pinch of salt and black pepper to taste. Stir again to combine. Increase the heat to medium-high and bring to a boil. Reduce the heat to a simmer and cook for 20-25 minutes or until the sauce is nice and thick.
  • Season with more salt and pepper if needed.
  • Serve the sloppy joes on fresh sandwich rolls, topped with grated cheddar cheese and parsley. Throw a sunny side-up egg on top for an added pop of flavor!

  2. A yummy runny egg seriously should go on top of all sandwiches and burger! I am loving these veggie loaded sloppy joes, especially the mushroom addition, big fan! Glad you had such a good time in Wyoming, my sister is headed there today for almost two weeks of camping, hiking, and backpacking, I’m so jealous!
