No Beer Pairing Today
Good morning, friends! Happy middle of the week! I hope the weather has been amazing where you are at, and it hasn’t been too hot. One thing that’s pretty awesome about living at almost 8000 ft is that we rarely see a day over 80 degrees F. While our winters can be cold, snowy, windy and all together drastic, our summers are absolutely beautiful. Oh Wyoming, you are so dramatic. It’s ok, I will take 9 months of scarves and Sorels for 3 months of absolute gorgeousness. That’s what impromptu trips to the caribbean are for! Am I right, or am I right?
I have to say the current weather conditions have made running a breeze, and smoothies have become my best friends this summer. Although, our weather has been amazing, we are currently residing in a second-floor itty bitty apartment with absolutely no air flow. Air conditioning? Ha, I wish! The locals in this little town will literally laugh you out of town if you put an air conditioner in. It is extremely stuffy in here, and I have been avoiding the oven/stovetop at all costs. Smoothies have become my breakfasts and lunches. I have to say…I’m not sad about it. It’s giving me a chance to get super creative. It has also taught me that I need a new blender DESPERATELY! I think I’ve just about worn this dinosaur out.
This 5-Ingredient Chocolate Almond Chia Smoothie with Toasted Coconut has become one of my favorite smoothie recipes. Almond Breeze’s Chocolate Almondmilk is thrown into a blender with almond butter, banana, chia seeds and spinach. Blended until as smooth as my old age blender will let me get and then topped with toasted coconut and chocolate chips. It’s super delicious you guys, and super good for you to! Give it a try!

5-Ingredient Chocolate Almond Chia Smoothie with Toasted Coconut
Servings:

Ingredients
- 1 1/2 frozen bananas
- 1 1/2 cups Almond Breeze Chocolate AlmondMilk
- 1 cup baby spinach leaves
- 2 tablespoons almond butter
- 2 tablespoons chia seeds
As needed:
- 1 cup ice
- Optional: toasted coconut and mini chocolate chips for garnish
Instructions
- To a high-powered blender, add the bananas, Almond Breeze Chocolate AlmondMilk, spinach, almond butter and chia seeds. Blend on high until smooth.
- For a thicker, icier smoothie, add 1 cup of ice if needed. Garnish with toasted coconut and mini chocolate chips if desired.
- Enjoy!

I’ve only been to the mountains during the summer months. It is definitely one of the most beautiful places to be. I can’t imagine 80 degree weather all summer. How blissful! This smoothie also looks pretty blissful as well!
