No Beer Pairing Today
Happy Friday, friends! Woohoo! It’s been quite a week around here. We are slowly inching our way towards moving out of this condo and into our new home. It’s been a long time coming, and I am SOOOOOO ready.
While I love the aspiration that comes with college youth, I do not necessarily love living amongst them; and with classes starting this past week, this town is booming with 18-22-year-old undergrads. It feels like 90% of them are living in our condo complex.
Ahhhhh…get me out! One thing is for sure, I do not miss those days, and I am reminded of it even more so this weekend since I turn the big 3-0. I KNOW RIGHT?! I can hardly believe it. Zach and I don’t have any crazy plans. We went to Vegas last month. It’s going to be low key with a football game, a long trail run, and dinner out. I’m definitely looking forward to it. Now, if I can stay away from this computer, the weekend will be complete!
So this cucumber melon smoothie is one of my odes to the end of summer. I’ve been sucking down these coolers all summer. While keeping it light and fresh, I’ve been sticking to ingredients that I find at the farmer’s market. This cucumber melon smoothie is one of my favorites, especially with apples being at their peak.

Cucumber Melon Smoothie

- 1 cup cold unsweetened apple juice
- 1 cup diced honeydew melon
- 1 cup loosely packed baby spinach
- 1 medium cucumber peeled, seeded and diced
- 1 green apple peeled, cored and diced
- 1 tablespoon raw honey
- 1 cup ice cubes
- Add all ingredients to the pitcher of a high-powered blender.
- Blend on high until smooth.
- Serve immediately.
