If you haven’t noticed, I’m kind of obsessed with Thanksgiving side dishes lately. At this rate, I’m going to be sick of Thanksgiving before it even gets here! Well, no…nevermind. I can’t see that ever happening. It’s not possible to be sick of Thanksgiving foods.
So I know this is my second sweet potato side dish that I’ve shared this year for Thanksgiving, but I just can’t help myself. I loooooooove sweet potatoes. I love them even more when they are sprinkled with butter, brown sugar and bacon.
This skillet sweet potato casserole with bacon, brown sugar crumble is one of my favorite recipes to serve over Thanksgiving or the holidays. It’s not the most traditional sweet potato casserole. There are no marshmallows involved (even though I love a good marshmallow topping), but that doesn’t mean it lacks in sweetness. However, bacon brings the whole dish together and keeps the dish from being cloyingly sweet.
This recipe is also so simple. A simple filling is made from tender sweet potatoes, butter and heavy cream. It is then poured into a cast iron skillet and sprinkled with the most addicting bacon, brown sugar topping. This is one for the record books you guys! Make it soon!
