From spring pea soup to curried chicken skewers and from zucchini quiche to Mexican corn pasta, here are 12 early spring dinner recipes!
Good morning, everyone! Welcome to this week’s roundup! Well, it’s official. We are just a couple of weeks away from the start of spring, and I can hardly contain my excitement. This isn’t just because spring promises higher temperatures and for Wyoming, sunnier skies (we don’t get much rain). This is because I love spring foods. Local fresh veggies and fruits start to grace the shelves of the market, and everything is just so bright and flavorful. These 12 recipes are some of my favorite recipes to kick off spring with. Although some of them were posted in the summertime, they are just as good this time of year.
I’m super in love with this week’s roundup, and I hope you guys agree!

We clearly don’t live in the same part of the world. Corn isn’t on the menu for us until late July!
