The great thing about spring is the shift in types of food you tend to eat. This asparagus tart is the perfect example of such a food. It is such a great side dish for your next spring brunch. This asparagus tart is topped with layers of grated cheese, bright asparagus, fresh burrata, and salty prosciutto. I top with soft boiled eggs and hot honey for the most amazing explosion of flavor. This one is a must-make, friends.

What will I need to make this asparagus tart with burrata and hot honey (see recipe below for entire ingredient list)?

1 sheet frozen puff pastry

1 egg lightly beaten with 1 tbsp of water

salt and black pepper

One lb fresh asparagus

1 cup grated fontina cheese

1 cup grated gruyere cheese

One tbsp olive oil

5-6 slices prosciutto

1 ball fresh burrata

2 soft or hard-boiled eggs

2 tbsp honey

1 tsp crushed red pepper

1 tsp hot sauce

Help! My puff pastry keeps breaking apart when rolling!

This is a common problem and nothing to freak out about. Puff pastry dough is definitely fragile and it is very easy to create holes when rolling. Simply pinch the holes back together. The immense amoutn of butter in puff pastry makes this an easy fix.

Do you have suggestions for other cheese to use? Gruyere and fontina are a little strong for my taste.

Sharp white cheddar cheese is the perfect substitute, and you can find it just about anywhere. Gruyere and fontina do grace the shelves of most super markets, but can sometimes be a pain to find in more remote areas. Use white cheddar if you wish! Grated parmesan is also another great substitution.

My puff pastry REALLY puffed up and the bubble popped after baking? Is this OK?

If you live at 7200ft, like I do, you definitely run into the issue of things over “puffing.” I run into this problem almost every time I cook puff pastry. It really won’t change the taste of the tart. You might just sacrifice style. :)

Ingredients
  

  • 1 sheet frozen puff pastry thawed
  • 1 egg lightly beaten with 1 tbsp of water
  • salt and black pepper
  • 1 lb fresh asparagus trimmed
  • 1 cup grated fontina cheese
  • 1 cup grated gruyere cheese
  • 1 tbsp olive oil
  • 5-6 slices prosciutto
  • 1 ball fresh burrata
  • 2 soft or hard-boiled eggs
  • 2 tbsp honey
  • 1 tsp crushed red pepper
  • 1 tsp hot sauce

Instructions
 

  • Preheat your oven to 400 degrees F, and line a large baking sheet with parchment paper.
  • Roll your puff pastry out on a lightly-floured surface to a 16x12in rectangle (or something similar – it doesn't have to be perfect). Brush the edge with the egg wash (about 1 inch from the edge). Sprinkle with salt. Bake the puff pastry for about 10 minutes or until just lightly brown and starting to puff.
  • Meanwhile in a large skillet, bring about an inch of water to a boil. Add the asparagus, and cook covered for about 5 minutes or until bright green. Remove the asparagus from the pan, and pat dry with a paper towel. Set aside.
  • Sprinkle the partially cooked puff pastry with 1/2 cup of fontina cheese and 1/2 cup of gruyere. Lay the asparagus on top, and then sprinkle on the remaining cheeses. Add the prosciutto in small clumps, and then drizzle the entire thing with olive oil. Bake for about 10-15 minutes more, or until the cheese is melted.
  • Add the burrata and soft or hard-boiled eggs. Serve immediately with hot honey (recipe below).
  • To make the hot honey, simply whisk together the honey, crushed red pepper, and hot sauce. Drizzle on top of the tart.
