We really decided to go with a burger theme this week, didn’t we!? Turkey Burgers earlier this week, then chicken burgers last night! This recipe was a total experiment. We had no idea how these were going to turn out. We actually tried to grind the chicken thigh ourselves – that didn’t work out so well. We decided to head back to the store and just get the pre-ground stuff instead, which was certainly the best idea. Whole Foods grinds their meat at the market, so we knew it was fresh. A blend of panko bread crumbs, garlic, cilantro, lime and more really elevated this burger. And although I’ve never actually had a chicken burger until last night, I’d say that we’d certainly make these again! We made a roasted squash medley with zucchini, yellow squash, garlic, and feta and it was a great match. Try both recipes out!

I didn’t realize that I didn’t pair a beer with this dish until I started writing this post! Oh my! Where was my head? Oh well, if I remember correctly, I was drinking New Belgium’s Cocoa Mole, and I don’t remember them tasting bad together. So if you are looking for a beer to pair this dish with, give Cocoa Mole a try! I can’t promise it will be the best pairing in the world, but it’s certainly delicious!
