Well I have another confession to make. I have always hated cranberry sauce. I don’t know what about the stuff makes me dislike it so much. Growing up, I’m pretty sure that my mom was the ONLY person who would eat it. I made it a personal goal this year to come up with a recipe that I (and everyone else, of course) would enjoy. I think I’ve done it guys. I really think I’ve done it. Maybe it’s the extremely insane amount of brown sugar. Maybe it’s the cinnamon, nutmeg and ginger. Maybe it’s the intense orange flavor! Who really knows. All I know is that this is the perfect cranberry sauce recipe for someone who absolutely hates cranberry sauce. I think I will have to try it on my mom this week, and see what she thinks. She will be the ultimate decision maker, and I will be sure to let all of you know what she decides. =)
Weather: It’s beautiful…once again. It is a little chilly out, but once again, it is the perfect Fall day. We were however supposed to get some snow this week, and THAT never happened. This makes me sad, but I will totally take a sunny, cloud-free day instead =).
What am I doing: I’m whipping up a delicious butternut squash gratin today and an even more delicious glazed parsnips recipe. These beauties will be up in the next week. Just a heads up: they are both a heavy dose of “yum.”
Recipe Fun Facts:
This cranberry sauce is easy. It’s extremely easy. You literally throw everything in a pot, bring it to a boil and simmer it until it has thickened. You can ALMOST forget about it! Just don’t forget about it for so long that you burn the stuff.
That would be bad.
This is also a great recipe to make the day before Turkey Day. It is even better if it has a chance to set overnight, so do yourself a favor and get it ready the day before. You will be so glad that you did.
I’m not sure if I’ve ever paired with North Coast Brewing Co. Russian Imperial Stout: Old Rasputin before. I know. I feel like I should know these things, but when you have hundreds of pairings in your handy dandy mental journal, you tend to forget one or two. Old Rasputin is THE definition of Russian Imperial Stout. It is just soooo delicious and perfect for the Fall and Winter months. I especially like it with sweeter dishes and desserts. This is why Old Rasputin is the perfect pairing for this cranberry sauce recipe. It only enhances it’s warmness. It’s a doozy of a stout. Give it a shot, and try it on Thanksgiving!
Have a great day everyone!
