These smoked salmon bites are the perfect bite-sized snack for Easter brunch!
Whew. It took a long time to get to Thursday this week didn’t it? I feel like I’ve been counting down the number of days until the weekend since like last Sunday. With Easter right around the corner, I have been in hardcore planning mode. My dad will be visiting us from the east, and I definitely want to make this Easter brunch special. I haven’t spent Easter with him in about 4 years, so you can imagine how important this brunch is! Crepes and cupcakes and asparagus (oh my) will definitely be going on the list, and these smoked salmon bites with mustard crème fraîche made with RITZ® crackers immediately made it to the menu as soon as I created them! I love when simple recipes like this jump up and bite you in extreme deliciousness!
You know what I absolutely love? I love it when I can make delicious and easy recipes from pantry staples. Zach and I do it all the time. It’s so strange because I used to LOVE grocery shopping. I mean, I used to genuinely get excited to go to the grocery store. As I’ve gotten older, I’ve come to the conclusion that I absolutely despise going to the grocery store. I go only on weekday mornings because I hate the crowds, and I shop for everything in that time frame. It keeps my stress levels on the low side. ;) Case in point, I love creating recipes with pantry staples and do it as often as Zach will let me.
RITZ®crackers, crème fraîche and smoked salmon are three ingredients that we ALWAYS have in our pantry and fridge. We are definitely snacking people, and are always whipping up small bites and snacks to curb those appetites in a lighter and satisfying way. There is also something genuinely adorable about small food, and I love getting creative with it!
I was amazed when I stopped by my local Walmart and found out how many different kinds of RITZ® crackers there sell now! It’s funny because when I’m at the store picking up a box, I never realized how many different types there were. I knew exactly where to reach for the original RITZ® crackers and didn’t really pay attention to what surrounded them. As I took a step back the other day when I was purchasing my RITZ® crackers for this blog post, I was mesmerized! Back in my day, there were like two kinds. Now, there are so many! As a result, I bought about 5 different types and have been snacking and sampling ever since! Love it!

Smoked Salmon Bites with Mustard Creme Fraiche

Ingredients
- 1/2 cup crème fraîche sour cream may be substituted
- 1/4 cup whole grain mustard
- 1 tablespoon fresh parsley chopped (plus extra for garnish)
- 1 teaspoon lemon zest plus extra for garnish
- salt and black pepper
- 12 RITZ® crackers
- 8 ounces thinly-sliced smoked salmon
Instructions
- In a small bowl, whisk together the crème fraîche, whole grain mustard, parsley, lemon zest and a dash of salt and black pepper to taste.
- Spread a teaspoon of the crème fraîche mixture on each RITZ® cracker and then top with a small slice of smoked salmon.
- Garnish with additional parsley and lemon zest and enjoy!
