Blueberries in a savory dish is put to the test in this recipe for Crispy Chicken Thighs with Blueberry Sauce!
The result: a delicious weeknight fall meal or holiday dinner entree! A simple blueberry sauce is made from thawed frozen blueberries, apple cider vinegar, honey, water and salt. The mixture is simmered down to a syrupy consistency. This addicting blueberry sauce is spooned on top of perfectly crisp chicken thighs that have been marinated in buttermilk. This is one dish you have to make as the temperatures start to lower!
This crispy chicken thighs with blueberry sauce dish is one of my favorite recipes I’ve made this fall. I still can’t get over how delicious it came out, how simple it was to make, and how quickly it was on the dinner table! Delicious frozen blueberries are the highlighted ingredient in this recipe. While most of the time we tend to incorporate blueberries into sweet dishes, it’s all about savory when it comes to these crispy chicken thighs with blueberry sauce. Adding a handful of blueberries to this dish, or any other holiday-inspired dish can make a huge difference in flavor. It really takes an ordinary chicken recipe to the next level!
The recipe is all very simple.
First you start by making your sauce. Frozen blueberries have been thawed and added to a heavy-bottomed saucepan, along with apple cider vinegar for some tang, honey for some sweetness and salt to even everything out. This concoction simmers for about 30 minutes or until the blueberries are mashable and the mixture starts to take on a syrupy consistency.
The result? The perfect topping for crispy chicken thighs or a roast leg of lamb. Or you could just eat it how I like to eat it…straight from the bowl with a spoon. Let this pot of deliciousness stay warm on the stove as you prepare your chicken.
The chicken portion of this recipe is so simple you guys. Skin-on, bone-in chicken thighs have been marinating in buttermilk for at least 4 hours and then you drain, drain, drain.
Season that chicken with all of the essentials.
Then place it in a hot and sizzling nonstick and oven-safe skillet, skin-side down. Let them crisp up until brown and then flip. Transfer them immediately to the oven to finish cooking.
Drizzle that addicting blueberry sauce on top and sprinkle with fresh parsley. Serve with your favorite side dishes, and I bet you will be coming back for seconds and thirds!

Wow, never thought to use blueberries like this! Awesome :)
First off, love how you are working with chicken thighs! Everyone wants boneless, skinless chicken breasts and it gets so repetitive! Secondly, I loving this method (a favourite of mine lately!) and it is essential to use high heat (though cleaning up the splatter afterwards kind of sucks, lol.)
