As I was scrolling through some of my Pinterest boards the other day, I thought to myself how much I use round-ups for my own personal use. Seriously you guys, I save more round-ups than I can count. I got to thinking. It’s time to start sharing more round-ups, and I’m starting with casseroles. Now, Zach and I don’t have any kids of our own so we really don’t need to worry about the whole back to school thing, but that doesn’t mean we don’t appreciate an easy weeknight meal or a scrumptious casserole recipe. This round-up is for anyone who has kids, doesn’t have kids, or just appreciates a good casserole!
There is a wide range of deliciousness going on in this round-up. Chicken and Mexican-style dishes are definitely the stars, with mac and cheese and a french toast bake thrown in for diversity. Can I get a show of hands of those of you who are as obsessed with breakfast for dinner as I am?!

Casseroles are some of my favorite things to cook. I love how they can be assembled in advance and baked off when needed. Plus they usually serve a large family, and mostly always have enough for leftovers! This list is incredible. They each look so delicious!
