It’s that time of year where peaches are just everywhere. Peach desserts are my go-to, and while this recipe for peach cobbler with homemade buttermilk biscuits is the perfect way to put those delicious summer peaches to use. This recipe isn’t daunting or difficult despite the need to make homemade biscuits. A simple peach filling is topped with a crispy crumble topping and the most amazing biscuits. The biscuits themselves are brushed with melted butter and sprinkled with cinnamon and sugar — sending you straight back to your childhood obsession with cinnamon toast. Top the peach cobbler with ice cream or whipped cream and you have the ultimate summertime dessert!

What will I need to make this peach cobbler with homemade buttermilk biscuits (see recipe below for entire ingredient list)

10 cups fresh or frozen peaches

1/4 cup light brown sugar + 2 tablespoons

1 tbsp cornstarch

juice from half a lemon

1 tsp vanilla extract

1 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 cup all-purpose flour

4 tbsp unsalted butter

1 batch buttermilk biscuits (see recipe below)

1 batch brown sugar crumble (see recipe below

Can I use a different kind of fruit?

You can definitely use a different type of fruit for this cobbler! If peaches really aren’t in season, blueberries are a really great substitution. Strawberries (oddly enough) are also pretty delicious! You can always go with another stone fruit as well, like plums or apricots.

Can I make this peach cobbler ahead of time?

You can make this in advance, within reason. Biscuit dough does not freeze well and tends to not rise the way it should. You can however prepare this cobbler completely through. Allow it to cool, wrap, and then freeze for up to three months. Thaw completely and enjoy. You can also make the filling in advance, freeze, and then continue with the rest of the recipe.

Could I just make drop biscuits without patting it into a rectangle?

Yes! Instead of patting the dough into a rectangle you could just drop it in lumps on top of the cobbler instead. You get a slightly different consistency, but it’s still delicious!

Ingredients
  

Biscuits

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 10 tbsp unsalted butter cold and cubed
  • 2/3 cup buttermilk
  • 1 tsp ground cinnamon
  • 3 tbsp granulated sugar
  • 1 tbsp melted butter

Peach Cobbler

  • 10 cups fresh or frozen peaches sliced
  • 1/4 cup light brown sugar + 2 tablespoons
  • 1 tbsp cornstarch
  • juice from half a lemon
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon divided
  • 1/4 tsp ground nutmeg
  • 1/4 tsp kosher salt
  • 1/4 cup all-purpose flour
  • 4 tbsp unsalted butter cold and cubed

Instructions
 

  • Preheat the oven to 375 degrees F and grease a 9x13in baking pan.
  • To make the biscuits, combine the flour, baking powder, salt, and butter in a food processor. Pulse 5-8 times or until pea-sized pieces start to form. With the food processor running on low, add the buttermilk. Once the dough just starts to come together, dump it on a floured surface. Pat the dough into a 1-inch thick rectangle. Cut into equal-sized squares (measuring about 1inx1in). Place the biscuits on a parchment paper-lined plate and place in the refrigerator. Meanwhile, whisk together the sugar and cinnamon. Set aside.
  • Now prepare the filling. In a large bowl, combine the peaches, 1/4 cup brown sugar, cornstarch, lemon juice, vanilla extract, 1/2 tsp cinnamon, nutmeg, and salt. Stir until evenly coated. Pour the mixture into the prepared pan.
  • Prepare the crumble by combining flour, remaining brown sugar, and butter in a small bowl. Using your hands, a fork, or a pastry cutter, work the mixture until coarse crumbs form (should be crumble-like). Sprinkle on top of the peach filling.
  • Brush the biscuits with melted butter and sprinkle with cinnamon-sugar. Place the biscuits on top of the filling and crumble. Bake the cobbler for 55min-1hour or until bubbly and the biscuits have browned. Remove from oven and let stand for 5 minutes before serving. Enjoy!
