Happy Monday, everyone! I hope you guys had lovely weekends! We spent the weekend in the front range of Colorado, which is always a little bittersweet for us. We don’t live very far from the state border, so we make the trip rather often. We definitely miss living there, but it’s nice that we live so close that we can visit as often as we like.

The only thing that I didn’t enjoy about spending the weekend in Colorado is that it took us away from spending the weekend outdoors, grilling and planting all the things. Zach and I have so much yard work to do, that it’s almost overwhelming. We have an insanely busy summer ahead of us, with a month long trip in Europe and some time spent in Jackson, WY and Montana. Every weekend counts at this point because there is so much to be done and so little time to do it!

I definitely miss being able to grill out this past weekend because I’m still having dreams about these grilled sweet potato chip nachos! Yes, they are grilled, and yes, they are amazing. They are topped with the most ooey gooey white cheddar cheese sauce and the sausage of all sausages, chorizo. They are full of spicy perfection, and I love them for the summertime. I think we will need to break out a batch of these this week sometime. What do you think?
